Callie’s Buttermilk Biscuits.

PBS aired a series called Callie’s Buttermilk Biscuits: How she rolls. These fluffy Buscuits have a light texture and tremendous flavor. They turned me from someone who thought all biscuits were dry and tasteless to a biscuit fan. And like most of the recipes I favor, they freeze very well. Callie’s Buttermilk Biscuits are handmade in her bakery every day.

Callie’s Buttermilk Biscuits:

Making Callie’s Buttermilk Biscuits.

Preheat oven to 500°. Line a baking sheet with parchment paper.

Ingredients:

  • 4 cups self-rising flour
  • or 4 cups all-purpose flour, +2 tsp. Baking Powder   + 1tsp Salt. + 2 tsps. Baking Soda;
  • 8 Tbsp soft butter + 6 Tbsp salted butter, melted and set aside.
  • 4 ounces room temperature cream cheese
  • 1 ½ to 2 cups Buttermilk

The Mixing Directions for Callie’s Buttermilk Biscuits:

Place flour into a bowl; add softened butter. Using a snapping finger motion, blend the flour and salted butter together. Once you have the flour and butter, the consistency of parmesan cheese, add cream cheese in the same snapping motion until the cream cheese portions are the size of a dime.

Add buttermilk all at once and combine by hand until the dough is wet and sticky.

Turn out onto a well-floured surface and knead until the dough forms a ball.

Roll the dough to 1 ½ to 2 inches thick. Cut dough with a 2-inch cutter and place on parchment lined sheet. Brush biscuits with half the melted butter.

Place in the oven and immediately turn the heat to 400°. Bake 16 to 18 minutes, turning the pan halfway through. Edges and tops should be a light golden brown.

As soon as you remove the biscuits from the oven, brush the tops with the remaining melted butter. Cool in the baking pan until cool enough to handle.

Makes a little more than 2 dozen biscuits.

These biscuits freeze well, so I doubled the recipe. Wrap baked biscuits either individually or in a group in plastic wrap, and place them in a freezer bag before freezing.  

When ready to serve, thaw and microwave for a few seconds.
