If you want a frosting that is not as sweet as buttercream, this is the one. It is a wonderful frosting and very versatile. You can add cocoa, coconut, crushed, or drained berries.
Ingredients:
- 1-8oz. packages cream cheese, softened.
- 1 ½ c. whipping cream
- 1 -1 1/2 cup. powdered sugar or enough for the frosting to hold peaks.
- 1 ½ c. whipping cream
- 2T. powdered sugar
In a large mixing bowl, beat cream cheese. Beat with an electric mixer on medium speed until smooth and holds peaks. Add powdered sugar, starting on low until incorporated. In a medium bowl, beat whipping cream until soft peaks form. Add the 2 Tbsp. of powdered sugar. Beat until stiff peaks form. By hand, fold 1/4 of the whipped cream into the cream cheese mixture to loosen it. Then fold in the remaining whipped cream.
Spread one-third of the cream cheese mixture over the bottom layer. Place the second layer on top. Spread one-third of the cream cheese mixture over the sides of both layers. Then, put the remaining one-third of the frosting mixture on top of the cake and smooth it to the edge, blending the top and sides.
