With football season underway, Pickled onions make a great topper for the hot dogs, hamburgers, and along side of the prefectly grilled steak.
Ingredients:
- 2 lb. red onions sliced in ¼ inch thick slices
- 1 c. coarse or pickling salt
- 2 c. red wine vinegar
- 2 c. water
- 1 1/2 c. sugar
- Pint sized canning jars (2-3) heated; soft boil
- 2-part canning lids Heated in hot water; soft boil.
Instructions:
Simple and quick
Heat jars and lids in hot water. Peel and slice onions ¼” or thinner. Bring vinegar, water, sugar to a boil. Boil for 5 minutes. Remove and drain water 1 jar at a time from hot water. Place slices into hot pint size canning jars. Pour hot brine carefully over onions to cover. Insert a table knife very carefully into the jar, move around to remove any air bubbles trapped in the onion slices. Wipe jars rim clean with a clean, damp cloth. Place the two-part canning lids. Turn the jar over to seal air tight. This can be kept in the refrigerator for up to 2 weeks.
